Sláinte!

Posted in Festiva Adventure Club tagged , , , , , , , , , , , , , , , , , at 10:28 am by festivaportland

Sláinte is pronounced “slon-cha” (which varies depending where in Ireland you ask that…) The word is a traditional Gaelic phrase translating to “cheers” in English.

So it’s only right that a laid back wine bar and lunge should be namesd that.

Located at 24 Preble Street, there’s little foot traffic, and if you were on Wharf Street, you would never think to hike up here. Visitors come specifically to visit Slainte.

The liquor collection isn’t as extensive as most pubs and the beer cooler is way too small, the strength of Slainte is its wines. It boasts over 80 different bottles and about 20 different wines by the glass. The Irish charm is key in this place, as they have imported drinks not carried everywhere, like Magner’s Hard Cider (brand is Bulmer’s overseas.)

The place is small, and including standing room the capacity tops out around 30. This creates an intimate feel that is both cozy and comfy. They have fantastically comfortable couches to sit on and a few coffee tables. The walls are illuminated with small decorative lights giving the lounge a steady glow.

Sláinte has regular open mic nights and features Thursday comedy nights. It is becomming a regular hangout for all ages. The lounge is right off Congress St. at the top of Preble St.

  • Hours: Monday-Friday 4 p.m.-1 a.m.; Saturday 5 p.m.-1 a.m.; closed Sunday.
  • Come check it out. Until then, Sláinte!

While in town checking out Sláinte, stop by Festiva Adventure Club, check out our log cabin in the city, and hear about our great deals on our Members Only Vacation Packages. Ask one of our Festiva Hospitality Travel Agents how they can get your family to take vacations while still respecting your budget. More information can be found at www.festiva.travel

    Buttermilk Fried Chicken

    Posted in Festiva Adventure Club tagged , , , , , , , , , , , , , , , , at 9:09 am by festivaportland

Everyone loves comfort food. Whether it is a lazy Friday for you today or you have a bit too much Irish fun left in your stomach from last night, this chicken will surely enhance your day. It’s tender chicken with a crispy outside and just enough grease to fight the hangover bug. And since it is fried in grape seed oil instead of shortening, it doesn’t have those icky trans fats!

    Ingredients

    • 1 (3 pound) fryer (see Wikipedia on the difference between broilers, fryers, and roasting birds), cut into pieces
    • 2 cups buttermilk
    • 1 large onion, sliced
    • 1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs.
    • 1/2 teaspoon paprika
    • 1/2 teaspoon cayenne pepper
    • 2 cups flour
    • 1/2 teaspoon garlic salt
    • 1/2 teaspoon onion salt
    • 1 teaspoon cayenne pepper
    • Salt and pepper
    • 2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil

    Method

1 Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper. (Regarding the use of buttermilk, my mother has had good results from soaking chicken in plain yogurt instead of buttermilk.)

2 Drain in colander, leaving some herbs on chicken. In a large paper or plastic (sturdy) bag, mix flour with seasonings. Meanwhile, heat 2 cups oil in a large, heavy-bottomed skillet (cast iron, stainless steel, or anodized aluminum – something that can take the heat) on medium high heat until a pinch of flour starts to sizzle when dropped in the hot oil (but not so hot that the pan is smoking). Remember when working with hot oil, always have a pan lid close by.

3 Place chicken pieces in bag with flour and shake until thoroughly coated. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown.

Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking.

4 Use tongs to remove chicken from pan. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain. Add more salt and pepper to taste. Serves 4.

No one gets enough family time these days, but you can enjoy family time like enjoying this meal with your family, more often! Imagine being able to enjoy Cajun chicken while in New Orleans or seafood caught that morning off Cape Cod. Just stop by Festiva Resorts at 190 Riverside Street right here in Portland.
